Pineapple Chicken

This is a super quick and easy dinner!  Serve with rice and steamed broccoli for a complete, delicious meal. 

Prep Time: 5 minutes

Cooking Time: 1 hour

 

Ingredients:

 

2 lbs skinless chicken pieces

1 can unsweetened pineapple chunks, drained

1 tsp dried rosemary

1/2 tsp paprika

1/2 tsp salt

1/4 tsp pepper

1/4 tsp ground ginger

 

Directions:

 

1. Place the chicken in a baking dish and pour the pineapple chunks over the chicken. 

 

2. In a small bowl, combine the rosemary, paprika, salt, pepper and ginger.  Sprinkle over the chicken.

 

3. Bake, covered, for one hour or until the chicken is no longer pink inside.
