Coconut Oven Fried Chicken Recipe

Preheat oven to 350F/175C
Ingredients:
1/4 c melted butter
2 lbs boneless chicken breasts
1/2 c flaked unsweetened coconut
1/4 c fine bread crumbs
Directions:
1. Brush the chicken pieces with melted butter.
2. In a shallow bowl, stir together the coconut and the bread crumbs. Roll the chicken pieces in the coconut mixture.
3. Place the chicken in a baking pan and drizzle any remaining butter over the chicken.
4. Bake for about an hour or until no longer pink inside.
